Vegetarian Meatloaf

My sister tonight mentioned she was making meatloaf. One super meaty meal that I loved before becoming pescatarian. But since I've been trying to get back on track with the whole non meat eating thing since I've gotten pregnant I was seriously wanting meatloaf now but not sure how to go about this the vegetarian way. You know, to satisfy my craving. I thought, well I have a GIANT box of vegan boca burgers in the freezer. I am sure I could figure it out from there. I found a simple recipe online using the normal boca burger crumbles so I knew it could be done. ANYWHO. Here's the recipe I came up with on my own:


Yields 2- 8.5 x 5 inch meatloafs
So cut in half if you want only one.

4 packs of vegan boca burgers (This equals 8 burgers in total)
1 chopped portobello mushroom
4 chopped asparagus stalks, approx.
6 fresh basil leaves, chopped
3 cloves garlic, chopped or pressed
1/4 cup wheat germ
1/4 cup ground flax seed
2 eggs, substitute for egg replacer to have a completely vegan meatloaf
Any other seasonings you would like
(I would've added an onion but I didn't have one.)
Ketchup to top

Preheat your oven to 350℉. Warm/thaw your burgers. Chop and smush them into a ground beef type texture. Mix in all your veggies and herbs, flax, wheat germ and eggs. I do this all by hand so I can feel the texture. It shouldn't be dry but shouldn't be soggy wet. It should be able to form a patty without falling apart. Add more flax seed if you need it to be drier. Press into your bread pan. Top with Ketchup if you so desire. Bake for 30-35 minutes. Enjoy!
